La Panthera, Mumbai’s modern European favourite by Chef Manuel Olveira, is heading to Bengaluru for a three-day pop-up at The Conservatory on 30th January (Friday), 31st January (Saturday) & 1st February (Sunday) – its first outing in BENGALURU and a long-awaited meeting of two spaces that care deeply about great food, drinks & vibrant energy.
The collaboration brings together La Panthera’s ingredient-first elevated comfort European cooking with The Conservatory’s airy, design-forward setting – a room built for people who know & love their food.

For this pop-up, Chef Manuel Olveira curates a menu that reads like a greatest-hits tour of the restaurant’s cooking philosophy: quality ingredients, refined techniques, playful touches and flavours that feel both comforting and yet quietly indulgent – the kind where you can taste the culinary artistry in every small, considered detail.

Things begin with tapas that have their own fan clubs back in Mumbai– the Beetroot Carpaccio with wasabi on a delicate filo; hand-cut Steak Tartare with crispy potato, truffle oil, and parmesan; the sharp, icy thrill of the Bloody Mary Ceviche (sea bass, lime leche de tigre, a Bloody Mary granita that wakes the palate and the mood); the ever-comforting Scamorza Arancini; a molten Baked Brie topped with caramelised onions and spicy almond brittle; and a smoky, paprika-kissed Charred Octopus.
The menu moves into La Panthera’s signature 48-hour fermented dough Neapolitan pizzas, including the much-loved Burrata di Bufala and the restaurant’s namesake La Panthera Pizza, lush with burrata and ’Nduja – robust, smoky, balanced.
Mains stay true to the restaurant’s style: hand-rolled Cacio e Pepe & Grilled Sea Bass, paired with pok choi, shiitake, charred leeks and horseradish edamame – a quiet, elegant plate with serious flavour.
Dessert is Tiramisu, La Panthera Way – a playful yet polished take layered with mascarpone, coffee ice cream and crisp textures. The kind of finish that makes you consider ordering one more “for the table,” even if the table pretends it won’t touch it.

“Bengaluru has a special energy. Every time we’ve cooked here, the way diners react – the curiosity, the excitement, the openness to flavour – it stays with you. It’s a city that makes cooking fun. As a chef, that’s fuel. With our first ever La Panthera pop-up in Bengaluru, we wanted to bring that same Panthera spirit back- dishes we love, flavours that connect, and the kind of experience that feels as good for us in the kitchen as it does for the guests at the table.”
ABOUT LA PANTHERA
Chef Manuel Olveira and Mickee Tuljapurkar, the minds behind La Loca Maria, La Panthera, brings a refined, vintage-chic European manor aesthetic to Mumbai. Their travels through Spain, Italy, France and Greece changed the way they looked at food and spaces. Incredible meals, stunning art, old architecture – all of it left a mark.
What they loved most was how Europe cooks: big, bold flavours, comfort food done with technique, and dishes that feel familiar but still elevated. That’s the energy they wanted to bring home. La Panthera isn’t Spanish or Italian or French – it’s their take on the best of European comfort, cooked with solid craft and served in a space that feels stylish, warm and a little bit like a getaway.
